I made myself a dead simple but very enjoyable light lunch today.

per person

Goat's Cheese Salad

  • A good handful of salad leaves ¹
  • Half a dozen cherry tomatoes ²
  • Half a Kidderton Ash Goats Cheese (sliced into rounds) ³
  • A small handful of croutons
  • Olive oil (Extra Virgin for preference)
  • Balsamic Vinegar
  • A little Parmigiana Cheese (grated or shaved)

  • Rinse and dry the salad leaves
